Get Cooking | Madagascar Vanilla Bean Coconut Milk Ice Cream

If you’ve read my blog you know I’m a yoga freak. And by yoga, I mean ice cream.

That’s the tagline on my twitter page and over in the sidebar here on this blog. And it makes me laugh when I read it. And a few people (those blessed souls that actually read the taglines on twitter pages and things like “about me”… bless their hearts) have remarked to me that it made them laugh as well. And it’s funny to me because it’s true (although I do really love yoga) I am an ice cream freak. If there were a 12 step program for ice cream addiction recovery, I’d have started over at least 4 times by now.

But my love affair witch ice cream has a tremulous past. You see, I was born with a very extreme intolerance to lactose. So extreme, in fact, that I couldn’t eat hot dogs (some have whey in them) or Starburst candies (sweetened condensed milk is an ingredient). Not a great situation for an ice cream lover like myself. Over the years I learned the best of the non-dairy variety (Tofutti Cuties) but even the best substitute didn’t stand up to the real thing. Luckily for me, I grew mostly out of my allergy through my teens and now only notice it if I go on a dairy binge. (Dairy binge? Who me? Never…)

And, luckily for my fellow timid-tummied dairy no goers, coconut milk has taken the stage as milk’s best ever substitute in ice cream. It’s so loved, that it’s even made the jump from specialty stores like Whole Foods to the ice cream aisle of your neighborhood Publix. How’s that for luck? But, you don’t have to pay $5 a pint (and let’s be honest here, a pint lasts maybe 3 days… or 1 afternoon if it’s a rough week) for this heavenly goodness. Nope. I’m going to show you how to make it yourself. It couldn’t be any easier and your options for tweaking and flavors are unlimited. Your stomach will thank me later…

Do you see the tiny little black vanilla dots? They are adorable, no?


Ingredients
2 fourteen ounce cans of organic coconut milk (use the full fat kind, trust me on this one)
3/4 cup of sugar (or 1 whole cup if you like it SWEET)
1 Madagascar vanilla bean (or vanilla extract if it’s all you’ve got)
1 teaspoon vanilla extract (optional)

Combine the milk, sugar, vanilla extract in small saucepan over very low heat. Whisk to combine. Split the vanilla bean lengthwise with a sharp paring knife and scoop out the seeds. Add the seeds to the milk mixture and whisk to combine. When mixture is fully combined and sugar is dissolved. Chill 1 hour. Pour into ice cream maker and churn according to manufacture instructions or pour into tupperware and place in freezer. Yields about 1 frozen quart. (Depending on how much you eat in the process.) Mine wasn’t quite a pint. ;)

Megan & Justin’s french inspired wedding at Cypress Grove | Sneak Peek

Cypress Grove Estate House | Cypress Grove Park | Orlando, Florida

Megan and Justin (who you may remember from our Partybooth video from yesterday) got married last weekend at one of our favorite venues with one of our favorite wedding teams ever, in the world, amen. I jokingly (kind of) refer to the grouping as the Orlando Dream Team because every wedding that we shoot together ends up being a favorite of mine and is executed beautifully and wonderfully and there’s butterflies and unicorns and magic. Maybe not that last part, but truly, it’s wonderful. This is just a sneak peek and I really feel like I’m not doing Megan and Justin’s wedding any justice with this because there were so many more details and aspects I want to show off and can’t… yet. Believe me, their wedding post is going to be HUGE! Tommy Murphy from Greenery Productions was on hand transforming the estate house and park into a pink hued wonderland of french-influenced flora. Brandee Gaar was running the show flanked by her amazing team of talented ladies from Blush by Brandee Gaar. And, might I add a new player to our dream team, Ben Lawles from Kaleidoscope Event Lighting was on hand lighting up the night in various shades of pink. AMAZING people. Seriously I want to bottle all of those vendors up and sell them as a wedding cure all pill because they’re that amazing (and Ben gave Brandee and I queso and chips to snack on, so you know he’s got a special place in my heart forever). Here’s a glimpse…

On mini vacations, and how white leggings are universally unflattering…

A few weeks ago I was on Jetsetter and in a moment of photo editing fever weakness I booked a night at the Raleigh Hotel on South Beach (for half off, let’s not be too crazy here). I had heard of the Raleigh a few times before and was intrigued by it’s history. It’s one of the most historic hotels on South Beach. It was built in the 1940′s and designed by L. Murray Dixon who was also the creative force behind the Ritz Plaza, the Tides, the Atlantis, and the Victor. You can see amazing photos of the Raleigh through the 40′s, 50′s, and 60′s on their website. Details Magazine recently did a write up on the Raleigh’s martini bar in their January issue and while we didn’t try a martini, we did walk by and the bar looks impeccably classy. What we did do, was walk up and down Ocean Drive, have 2 for 1 frozen concoctions at the Cardozo on Ocean, people watched and remarked about how fabulous everyone there seems to be (And how unforgiving white leggings are in general. Seriously people, through those jokers away right now! I don’t care what Amercian Apparel says. You’ll thank me later.), visited Peter Lik’s fine art gallery, noshed at the Gourmet Carrot and Nexxt Cafe, and laid out by the Raleigh’s famous pool. It was the perfect mini getaway that we needed to disconnect, breath, and be able to spend some quality time together (something that we rarely actually get to do). And, we took some photos.

    We just got back from a nice long vacation ourselves, however, now I feel like I have even more to do. And personally I think all white bottoms (pants, skirts, whatever) are pretty awful and you couldn’t pay me to wear them. Though, I tend to mostly wear black and never wear white, so that may have something to do with it.
